Ingredients:

For the Potato Filling:

- 4 large potatoes, boiled and mashed

- 2-3 green chilies, finely chopped

- 1 inch ginger, grated

- 4-5 cloves garlic, minced

- 1 teaspoon mustard seeds

- 1 teaspoon cumin seeds

- A pinch of asafoetida (hing)

- A few curry leaves

- 1/2 teaspoon turmeric powder

- Salt to taste

- 2 tablespoons oil

For the Gram Flour Batter:

- 1 cup gram flour (besan)

- 1/4 teaspoon turmeric powder

- A pinch of baking soda

- Salt to taste

- Water, as needed

For Assembling:

- Pav (soft dinner rolls)

- Green chutney

- Tamarind chutney

- Garlic chutney (optional)

- Thinly sliced onions (optional)

- Coriander leaves, finely chopped

Instructions:

1. Prepare the Potato Filling:

   - Heat oil in a pan. Add mustard seeds and cumin seeds. Let them crackle.

   - Add asafoetida, curry leaves, green chilies, ginger, and garlic. Sauté for a minute.

   - Add turmeric powder and mashed potatoes. Mix well.

   - Season with salt and cook for 2-3 minutes. Remove from heat and let it cool.

2. Make the Gram Flour Batter:

   - In a bowl, mix gram flour, turmeric powder, baking soda, and salt.

   - Gradually add water to make a smooth batter of pouring consistency. Ensure there are no lumps.

3. Shape and Fry the Potato Vadas:

   - Take a portion of the potato filling and shape it into small balls or patties.

   - Heat oil in a kadai or frying pan for deep frying.

   - Dip each potato ball/patty into the gram flour batter, ensuring it is coated evenly.

   - Carefully drop the coated vadas into the hot oil and fry until golden brown and crisp. Remove and drain excess oil on paper towels.

4. Assemble the Vada Pav:

   - Slit the pav horizontally without cutting all the way through.

   - Spread green chutney on one side and tamarind chutney on the other.

   - Place a vada between the pav slices.

   - Optionally, spread garlic chutney on the vada for extra flavor.

   - Add thinly sliced onions and chopped coriander leaves.

   - Serve hot with extra chutney on the side.

Enjoy the deliciousness of homemade Vada Pav, reminiscent of the bustling streets of Mumbai!

Tips:

- Adjust the spice levels according to your preference by increasing or decreasing the amount of green chilies.

- For extra crunch, you can add a few roasted peanuts to the potato filling.

- If you don't have garlic chutney, you can skip it or use a mixture of garlic paste and red chili powder.
